Flourless chocolate and orange cake

Indulgent gluten-free cake with coconut sugar, almond meal, and raw cacao powder.
Ingredients:
  • 1 orange
  • 3 eggs, separated
  • 150g coconut sugar (see Notes)
  • 150g almond meal
  • 50g (1/2 cup) raw cacao powder
  • 2.00 gm baking powder
  • Pinch of salt
  • Raw cacao powder, extra, to dust
  • Orange blossom honey, to serve (optional)
Instructions:
  • In a small saucepan, submerge the orange in cold water and bring to a boil over medium-high heat. Simmer on low for 2 hours, adding water if needed, until the orange is tender. Let it cool completely, then roughly chop and remove the seeds.
  • Preheat your oven to 180C/160C fan forced. Grease and line a 20cm springform cake pan.
  • Combine egg yolks, sugar, and orange in a food processor until smooth. Add almond meal, cacao powder, baking powder, and salt. Pulse until mixed. Transfer mixture to a large bowl.
  • Beat egg whites with electric beaters until stiff peaks form. Gently fold egg whites into chocolate mixture in 2 batches until just combined. Pour into prepared pan and smooth the surface.
  • Bake for 35 minutes, or until a skewer inserted in the centre comes out clean. Allow to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely. Dust with extra cacao powder and drizzle with honey if desired.
