Indulge in a decadent gluten-free flourless chocolate cake with rich dark chocolate meringue and luscious Bailey's chocolate sauce.
Ingredients:
  • 200g dark chocolate (70% cocoa), chopped
  • 200g butter, chopped
  • 215g (1 cup) caster sugar
  • 4 eggs
  • 55g (1/2 cup) almond meal
  • 30g (1/4 cup) dark cocoa powder, sifted, plus extra, to dust
  • 60ml (1/4 cup) Irish Cream liqueur
  • 3 egg whites
  • 155g (3/4 cup) caster sugar
  • 40g dark chocolate (70% cocoa), finely chopped
  • 60g dark chocolate (70% cocoa), chopped
  • 80ml (1/3 cup) thickened cream
  • 3 tsp Irish Cream liqueur
Instructions:
  • Preheat your oven to 170C/150C fan forced. Grease and line a 22cm springform pan with baking paper.
  • Melt chocolate and butter together in a heatproof bowl over simmering water, stirring until smooth. Mix in the sugar. Remove from heat and let it cool for 5 minutes.
  • Gradually mix each egg into the luscious chocolate blend until fully incorporated. Fold in almond meal, cocoa, and Baileys until evenly combined. Transfer the mixture into the pan and bake for 35 minutes until the center sets. Let cool in the pan until fully at room temperature.
  • For the meringue topping, preheat the oven to 200C/180C fan forced. In a heatproof bowl over simmering water, whisk egg white and sugar for 4 minutes until frothy and sugar dissolves. Remove from heat and let cool for 1 minute. Use electric beaters to whisk for 5 minutes until thick and glossy. Gently fold in chocolate. Spoon on cake, create peaks with a spoon, then bake for 10-12 minutes until firm. Cool completely.
  • Create the sauce by combining chocolate, cream, and Baileys in a heatproof bowl over simmering water, ensuring the bowl doesn't touch the water. Stir with a metal spoon until melted and smooth. Remove from heat and let it cool and thicken for 30 minutes.
  • Sprinkle cake with additional cocoa powder and finish with a decadent chocolate sauce before serving.
