Flourless chocolate cake

Perfect your baking skills with this decadent flourless chocolate cake recipe.
Ingredients:
  • 1 tsp Instant Coffee Powder
  • 62.50 gm boiling water
  • 200g butter, chopped
  • 180g Baking Dark Chocolate, chopped
  • 20.00 gm cocoa powder, sifted
  • 4 eggs, separated
  • 215.00 gm caster sugar
  • 200.00 gm almond meal (ground almonds)
  • Cocoa powder, for dusting
  • Double cream, to serve
  • Strawberries, to serve
Instructions:
  • Preheat your oven to 180°C (160°C fan-forced) and generously grease a 6cm-deep, 22cm round spring-form cake pan. Line both the base and sides with baking paper for easy removal later.
  • In a heatproof jug, combine coffee powder and boiling water, stirring until dissolved. In a medium saucepan over low heat, melt butter, chocolate, cocoa powder, and coffee mixture together, stirring constantly for 2 to 3 minutes until well combined. Remove from heat and transfer to a bowl to cool slightly.
  • In a mixing bowl, whisk egg yolks and sugar with an electric mixer for 5 minutes until thick. Set aside. In another bowl, whip egg whites with an electric mixer until soft peaks form.
  • Combine the chocolate mixture and almond meal with the egg yolk mixture. Gently fold in half of the egg whites using a large metal spoon, then repeat with the remaining egg whites. Pour the mixture into the prepared pan and bake for 40 to 45 minutes or until a skewer inserted in the center comes out with moist crumbs clinging. Allow the cake to cool completely in the pan. Dust with cocoa powder and serve with cream and strawberries.
