Versatile blueberry cornbread - Great for any meal or snack time!
Ingredients:
  • 125g plain flour
  • 170g cornmeal
  • 12.00 gm baking powder
  • 60g caster sugar
  • 250ml buttermilk
  • 60g butter, melted and cooled
  • 150g blueberries
Instructions:
  • Begin by preheating the oven to 180°C. Lightly grease a 10cm x 22cm x 6cm loaf tin. In a large bowl, sift together plain flour, cornmeal, and baking powder. Stir in caster sugar and create a well in the center.
  • Combine eggs, buttermilk, and melted butter, then mix into the flour until just combined. Carefully fold in the blueberries.
  • Pour the batter into the greased tin and bake for 35-40 minutes or until a skewer comes out clean when inserted into the center. Allow it to sit in the tin for 5 minutes before transferring it to a wire rack to cool. Enjoy by slicing and serving with a spread of butter and honey.
