Delightful blueberry cornbread fusion for all to savor.
Ingredients:
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 0.5 cup white sugar
  • 3 teaspoons baking powder
  • 2 eggs
  • 0.5 cup vegetable oil
  • 2 cups blueberries
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and generously grease a 9-inch square baking dish.
  • In a bowl, combine cornmeal, flour, sugar, baking powder, and salt. In a separate large bowl, whisk together eggs, milk, and oil. Gently fold in the cornmeal mixture until just combined. Then gently fold in the blueberries before pouring the batter into the prepared baking dish.
  • Bake in the oven until a toothpick inserted into the center comes out clean, about 25-30 minutes.
