Blueberry bran loaf - a quick and easy twist on classic banana bread.
Ingredients:
  • 1 1/2 cups Fiber One™ original bran cereal
  • 3/4 cup water
  • 1 tablespoon grated orange peel
  • 1/2 cup orange juice
  • 2 cups Gold Medal™ all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons vegetable oil
  • 1 cup Cascadian Farm® organic frozen blueberries (do not thaw)
Instructions:
  • Preheat oven to 350°F. Grease only the bottom of a 9x5-inch loaf pan with shortening or baking spray with flour. Place cereal in a sealed plastic bag and crush with a rolling pin, meat mallet, or food processor.
  • Combine cereal, water, fresh orange zest, and freshly squeezed orange juice in a large bowl. Allow it to sit for 10 minutes to enhance the flavors.
  • Combine all remaining ingredients, except for the blueberries, into the batter. Gently fold in the blueberries before spreading the batter in the pan.
  • Bake for 55 to 65 minutes until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes, then gently remove the loaf from the pan onto a rack. Allow it to completely cool for about 2 hours before slicing.
