Wholesome blueberry-orange bread with Fiber One® cereal. Prep in 20 minutes, bake and enjoy!
Ingredients:
  • 1 1/2 cups Fiber One™ original bran cereal
  • 3/4 cup water
  • 1 tablespoon grated orange peel
  • 1/2 cup orange juice
  • 2 cups Gold Medal™ all-purpose flour
  • 3/4 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 tablespoons vegetable oil
  • 1 egg
  • 1 cup fresh or frozen (do not thaw) blueberries
  • 1/2 cup powdered sugar
  • 1/4 teaspoon vanilla
  • 2 to 3 teaspoons milk
Instructions:
  • Preheat oven to 350°F and grease the bottom of a 9x5-inch loaf pan with shortening or baking spray with flour. Crush cereal in a resealable food-storage plastic bag using a rolling pin, meat mallet, or food processor.
  • Combine cereal with refreshing orange flavors by mixing it with water, orange peel, and orange juice in a large bowl. Allow it to rest for 10 minutes to enhance the flavors.
  • Fold in all remaining ingredients, gently incorporating the blueberries. Transfer the batter into the pan, spreading it out evenly.
  • Bake for 55 to 65 minutes or until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes, then gently loosen the sides of the loaf and transfer it from the pan to a cooling rack. Allow it to cool completely for about 2 hours before slicing.
  • Combine all vanilla glaze ingredients in a small bowl until smooth and pourable. Drizzle over the bread.
