Fiber One® cereal creates a delicious loaf with applesauce, cranberries, orange peel, and a hint of maple flavor.
Ingredients:
  • 1 cup Fiber One™ original bran cereal
  • 3 2/3 cups Gold Medal™ all-purpose flour
  • 1 cup sweetened dried cranberries
  • 1 tablespoon grated orange peel
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 cup butter or margarine
  • 1 cup buttermilk
  • 1/4 cup applesauce
  • 1/4 cup maple-flavored syrup
  • 2 eggs
Instructions:
  • Preheat the oven to 350°F. Grease a large cookie sheet with shortening or cooking spray. Place cereal in a zip-top plastic bag, seal, and crush with a rolling pin, meat mallet, or in a food processor.
  • Combine cereal, flour, cranberries, orange peel, baking powder, baking soda, and salt in a large bowl. Mix in butter using a pastry blender or 2 knives until mixture resembles fine crumbs. Set aside for later use.
  • Combine buttermilk, applesauce, maple syrup, and eggs in a medium bowl. Mix into the cereal mixture until a dough forms. Transfer the dough onto a lightly floured surface and knead for 30 seconds to 1 minute until smooth (if sticky, add extra flour, 1 tablespoon at a time). Shape the dough into a 7-inch round and place it on a baking sheet. Cut an X shape, 1/2 inch deep, on the top of the dough.
  • Bake for 55 to 60 minutes until a toothpick inserted in center comes out clean, then transfer to a cooling rack and let it cool for 30 minutes.
