Delightful make-ahead French toast for any meal.
Ingredients:
  • 1/3 cup sugar
  • 1 teaspoon cornstarch
  • 1/4 cup orange juice
  • 2 cups fresh or Cascadian Farm® frozen organic blueberries
  • 16 slices French bread, 1 inch thick
  • 1/2 cup orange marmalade
  • 6 eggs
  • 1 1/2 cups half-and-half
  • 1/4 cup sugar
  • 1/4 teaspoon ground nutmeg
  • 2 teaspoons vanilla
  • 1/4 cup margarine or butter, melted
Instructions:
  • In a small saucepan, combine 1/3 cup of sugar, cornstarch, and orange juice until smooth. Add blueberries and cook over medium heat, stirring often, until boiling. Continue to cook for 3 minutes, stirring frequently.
  • Prepare the jelly roll pan by spraying it with cooking spray. Make a lengthwise slit in each bread slice, being careful not to cut all the way through. Fill each slit with marmalade. Arrange the slices in the pan. In a large bowl, whisk together eggs, half-and-half, 1/4 cup sugar, nutmeg, and vanilla until smooth. Pour the mixture over the bread slices, ensuring each one is coated evenly. Cover the pan and refrigerate for 8 hours or overnight.
  • Preheat the oven to 425°F. Remove the cover from the French toast and generously drizzle with melted margarine. Bake for 20-25 minutes, or until it turns a beautiful golden brown. Enjoy with a side of Blueberry-Orange Syrup.
