Elevate bran muffins with blueberries and zesty orange.
Ingredients:
  • 0.5 cup oat bran
  • 1 cup wheat bran
  • 0.5 cup sour cream
  • 0.5 cup milk
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.66666668653488 cup brown sugar
  • 1 cup fresh blueberries
  • 0.33333334326744 cup vegetable oil
  • 1 orange, juiced and zested
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare a 12-cup muffin tin with either greased cups or paper liners.
  • In a large bowl, mix oat bran and wheat bran together. Stir in sour cream and milk and let sit for 10 minutes. In a separate bowl, combine flour, baking powder, baking soda, brown sugar, and salt. Gently fold blueberries into the flour mixture. Mix vegetable oil, orange juice and zest, egg, and vanilla extract into the bran mixture. Carefully fold the flour mixture into the wet ingredients until just combined. Spoon batter into lined muffin cups.
  • Bake in the preheated oven for 15 to 20 minutes until a toothpick comes out clean. Then cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
