Indulge in this irresistible blueberry banana bread made with Bisquick™. Moist, sweet, and packed with fruit, this easy recipe is perfect for breakfast or a snack. Bonus: oats add a delightful texture!
Ingredients:
  • 2 cups Original Bisquick™ mix
  • 3/4 cup quick-cooking oats
  • 2/3 cup sugar
  • 1 cup mashed very ripe banana (2 medium)
  • 1/4 cup milk
  • 2 eggs
  • 1 cup fresh or frozen (thawed and drained) blueberries
Instructions:
  • Preheat oven to 350°F and generously grease the bottom of a 9x5x3 inch loaf pan.
  • Combine Bisquick, oats, sugar, bananas, milk, and eggs in a large bowl until just moistened. Beat vigorously for 30 seconds.
  • Fold the blueberries into the mixture and transfer it to the pan.
  • Bake for 45 to 55 minutes until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes, then carefully remove the loaf from the pan and place it top side up on a wire rack. Allow it to cool completely for about 2 hours before slicing into 24 pieces. Wrap tightly and store at room temperature for up to 4 days or in the refrigerator for up to 10 days.
