Moist banana bread with rich dark beer, spiced with cinnamon, cardamom, allspice, cloves, and fresh ginger for extra depth of flavor.
Ingredients:
  • 2 cups packed brown sugar
  • 1 cup mashed bananas
  • 2 tablespoons vegetable oil
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 0.5 teaspoon ground allspice
  • 1 tablespoon ground cardamom
  • 0.5 teaspoon ground cloves
  • 2 cups dark beer
  • 1.5 cups chopped walnuts
  • 2 cups dates, pitted and chopped
  • 2 tablespoons minced fresh ginger root
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and gently grease two 9x5-inch loaf pans.
  • Combine the brown sugar, banana, eggs, and vanilla in a spacious bowl. For extra moisture, feel free to incorporate oil to the mix.
  • Combine 3 cups of flour, baking soda, salt, cinnamon, all spice, cardamom, and cloves in a separate bowl. Gradually mix the dry ingredients and beer into the banana mixture, alternating between the two.
  • Coat the walnuts with the remaining flour, then mix in the dates and ginger until well combined. Transfer the mixture into two loaf pans.
  • Bake in a preheated oven until a toothpick inserted into the center of each loaf comes out clean, approximately for 1 hour.
