Indulge in decadent caramel crepe stack with creamy cheese and fresh bananas for a delicious brunch treat.
Ingredients:
  • 1 cup all-purpose flour
  • 1 cup stale beer, room temperature
  • 4 eggs, room temperature
  • 2 tablespoons vegetable oil
  • 0.25 teaspoon ground nutmeg
  • 4 bananas, sliced 1/4-inch thick
  • 1 lemon, juiced, or as needed
  • 1 (8 ounce) package cream cheese
  • 0.25 cup brown sugar
  • 1 cup whipped topping
  • 0.5 cup boiling water
  • 3 tablespoons cornstarch
  • 0.5 cup water
  • 3 tablespoons butter
  • 8 teaspoons vegetable oil, divided
Instructions:
  • Combine flour, beer, eggs, 2 tablespoons of vegetable oil, nutmeg, and salt in a large bowl and whisk until a smooth batter forms.
  • Coat bananas with a generous amount of lemon juice in a separate bowl.
  • In a separate bowl, blend together the cream cheese and brown sugar until smooth and creamy. Gently fold in the whipped topping to create the luscious cheese filling. Set aside for later use.
  • In a saucepan over medium heat, stir white sugar constantly until it melts and turns brown (2 to 4 minutes). Remove from heat, carefully stir in boiling water until smooth, then return to heat until a clear syrup forms.
  • Combine cornstarch and 1/2 cup water in a small bowl, then add to the syrup in a saucepan. Cook over low heat, stirring constantly, until the mixture thickens and becomes clear, about 5 to 7 minutes. Stir in butter to create a luscious caramel sauce.
  • In an 8-inch crepe pan over medium heat, warm 1 teaspoon of vegetable oil. Pour 1/4 cup of crepe batter into the pan and swirl to cover the surface evenly. Cook until the edges start to curl and the batter shifts from wet to moist. Flip the crepe and cook until lightly golden. Transfer to a plate, cover with a towel to retain moisture. Repeat with remaining batter, greasing the pan with 1 teaspoon of oil each time to prevent sticking.
  • Spread a decadent layer of caramel sauce over each delicate crepe. Generously layer with creamy cream cheese filling and bananas. Roll them up like a snug burrito and place on a platter seam-side down. Continue this delicious process with the rest of the crepes, then finish off by drizzling the remaining caramel sauce over the top.
