Dill-infused beer batter for crispy deep-fried fish like cod, haddock, sea bass, or orange roughy. Serve with classic sides: French fries, hush puppies, and zesty ginger coleslaw.
Ingredients:
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon dried dill weed
  • 0.75 cup beer
  • 0.5 cup milk
  • 2 pounds cod fillets
  • 2 quarts vegetable oil for frying
Instructions:
  • Combine flour, salt, baking powder, and dill in a large bowl. Stir in beer, milk, and eggs until well combined.
  • Coat fish fillets generously in batter mixture, allowing them to marinate for 15 minutes.
  • Preheat deep fryer to 375 degrees F (190 degrees C). Fry fish in batches in hot oil until golden brown. Serve.
