Southwestern Beer-Batter Fish with Green Chile Tartar Sauce

Spicy chili powder enhances flavor of quick and crispy fried fish ready in 30 minutes.
Ingredients:
  • 1/2 cup mayonnaise or salad dressing
  • 2 tablespoons from 1 can (4 oz) Old El Paso™ Chopped Green Chiles, drained
  • 2 teaspoons chopped fresh parsley
  • 1 teaspoon finely chopped onion
  • Vegetable oil
  • 1 1/4 cups Original Bisquick™ mix
  • 1 lb tilapia fillets, about 1/2 inch thick, cut into 4 serving pieces
  • 1 1/2 teaspoons chili powder
  • 3/4 cup regular or nonalcoholic beer
  • 1 egg
  • 1 small lemon, cut into quarters
Instructions:
  • Combine sauce ingredients in a small bowl and chill until ready to serve.
  • Heat 1 1/2 inches of oil to 350°F in a 10-inch skillet or deep fryer. Coat fish lightly with 1/4 cup of Bisquick mix from a shallow dish.
  • In a medium bowl, whisk together 1 cup of Bisquick mix, chili powder, salt, beer, and egg until smooth. Dip fish into the batter, allowing any excess to drip off.
  • Pan-sear the fish in sizzling oil until beautifully golden for 1 1/2 to 2 minutes on each side. Remove and let it crisp up on paper towels. Accompany with a delicious sauce and fresh lemon wedges.
