Tasty cornbread with beer, buttermilk, green onion, and spicy jalapeno.
Ingredients:
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 cup buttermilk
  • 0.5 cup beer (brown ale- or pilsner-style)
  • 0.5 cup butter, melted
  • 2 eggs, beaten
  • 0.33333334326744 cup white sugar
  • 4 green onions, chopped
  • 1 fresh jalapeno pepper, chopped
Instructions:
  • Preheat your oven to 400°F (200°C) and generously grease a loaf pan.
  • Combine cornmeal, flour, baking powder, baking soda, and salt in a spacious bowl, whisking until well mixed.
  • Combine buttermilk, beer, and melted butter in a separate bowl. Slowly incorporate into the cornmeal mixture to create a batter. Stir in eggs and sugar. Gently fold in green onions and jalapeno pepper, then transfer the mixture to a prepared loaf pan.
  • Bake in the preheated oven for 30 to 35 minutes, or until a knife inserted into the center comes out clean. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
