Beer-infused queso smothered nachos are the ultimate party pleaser.
Ingredients:
  • 8 cups tortilla chips
  • 1/2 cup lager beer, such as a Boston lager
  • 2 cups shredded American cheese (8 oz)
  • 1 cup shredded mild Cheddar cheese (4 oz)
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles, drained
  • 1 can (15 oz) Progresso™ black beans, drained, rinsed
  • 1/2 cup thick & chunky salsa
  • 1 medium avocado, pitted, peeled and chopped
  • 1 medium tomato, seeded, chopped
  • 2 tablespoons chopped fresh cilantro
Instructions:
  • Preheat the oven to 350°F.
  • Cover a large cookie sheet with parchment paper. Place tortilla chips on the sheet in a single layer. Bake for 5 minutes to heat the chips.
  • In a 2-quart saucepan, gently heat beer over medium heat until it begins to simmer. Gradually incorporate the cheeses in small batches, whisking constantly until smooth. Fold in the chiles.
  • Combine the beans and salsa in a medium bowl. Microwave on high, uncovered, for 2 to 3 minutes until heated through.
  • Drizzle half of the cheese sauce over hot chips, then layer half of the bean mixture on top. Add the rest of the cheese sauce followed by the remaining bean mixture. Serve with any leftover ingredients.
