Slow-Cooker Spicy BEERbacoa Tacos

Indulge in a hearty taco filled with succulent beer-braised beef, zesty chipotle salsa, and creamy queso fresco. Enjoy with a refreshing MANgarita - a shot of aged tequila paired with a cold Mexican beer.
Ingredients:
  • 1 fresh beef brisket (not corned beef), 2 to 3 lb, trimmed of fat
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 teaspoons vegetable oil
  • 3 cloves garlic, cut in half
  • 1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
  • 1/2 cup Mexican beer
  • 2 canned chipotle chiles in adobo sauce
  • 1 teaspoon vegetable oil
  • 1 large onion, sliced (3 cups)
  • 16 tacos shells from 2 boxes (4.7 oz) Old El Paso™ Stand 'n Stuff Taco Shells (10 Count), heated as directed on box
  • 1 cup crumbled queso fresco cheese
  • 1 medium avocado, pitted, peeled and sliced
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. In a hot 12-inch nonstick skillet, season both sides of the brisket with salt and pepper. Add 2 teaspoons of oil to the skillet and sear the brisket for about 3 minutes on each side until browned. Transfer the brisket carefully to the prepared slow cooker, and add garlic.
  • In a blender, combine chipotle salsa ingredients and blend on medium speed until smooth. Transfer half of the salsa (about 1 cup) into the slow cooker, cover, and refrigerate the remaining salsa. Cook the brisket on High heat setting in the slow cooker for 4 to 4 1/2 hours until very tender.
  • In the same skillet, add 1 teaspoon of oil and heat over high heat. Stir in onion slices and cook over medium-low heat, stirring occasionally, until onions are caramelized, about 15 minutes. Remove from skillet, cover, and refrigerate until ready to serve.
  • Shred brisket using a fork after removing it from the slow cooker. Reheat caramelized onions. Fill each taco shell with shredded brisket and garnish with caramelized onions. Top each taco with 1 tablespoon of reserved salsa, queso fresco, and avocado.
