Delicious 4-layer spice cake packed with nuts, raisins, and coconut, filled with tangy citrus and coconut filling.
Ingredients:
  • 2 cups raisins
  • 2 cups flaked coconut
  • 1 cup chopped pecans
  • 3 cups all-purpose flour, divided
  • 2 cups white sugar
  • 1 cup butter
  • 6 large egg yolks
  • 4 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon ground cloves
  • 1 cup milk
  • 6 large egg whites
  • 0.25 cup all-purpose flour
  • 1.5 cups water
  • 2 oranges, peeled and seeded
  • 2 lemons, peeled and seeded
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease and flour four (9-inch) round cake pans.
  • Combine raisins, coconut, and pecans with 1 cup of flour in a medium bowl, ensuring they are thoroughly coated. Set aside.
  • In a large bowl, use an electric mixer to cream together sugar and butter until light and fluffy. Beat in egg yolks one at a time, ensuring each is well mixed. In a separate bowl, sift together 2 cups flour, baking powder, cinnamon, nutmeg, and cloves. Gradually add the flour mixture to the egg mixture, alternating with milk, and beat briefly after each addition. Fold in the raisin mixture until fully incorporated.
  • In a clean separate bowl, whip egg whites until stiff peaks form. Gently fold them into the batter until fully incorporated. Then, evenly divide the batter into the cake pans.
  • Bake in the preheated oven for about 30 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer them to wire racks to finish cooling.
  • Prepare the filling by whisking sugar and flour in a saucepan with water over medium heat until the sugar dissolves. Fold in chopped oranges and lemons, let it come to a boil, then simmer until thickened, approximately 10 minutes. Mix in coconut and let it cool.
  • Layer the cooled cake with the filling, ensuring the top layer is covered with filling.
