Toffee apple roll with sesame ice-cream

Sesame ice cream enhances our crispy golden filo dessert for a delicious Japanese-inspired treat.
Ingredients:
  • 1L vanilla ice-cream, softened slightly
  • 3 x 40g pkts sesame snaps, coarsely broken
  • 5 apples, peeled, cored, coarsely chopped
  • 215g (1 cup) caster sugar
  • 185ml (3/4 cup) water
  • 6 sheets filo pastry
  • Olive oil spray
  • 40.00 ml fresh breadcrumbs (made from day-old bread)
  • 6.00 gm sesame seeds
Instructions:
  • Pour the ice-cream into a spacious bowl, keeping the container aside. Mix in the sesame snaps. Transfer the mixture back into the container and freeze.
  • Mix the apple and lemon juice in a heatproof bowl. In a saucepan, dissolve sugar in water over low heat, using a wet pastry brush to wipe down any sugar crystals on the sides of the pan. Turn up the heat to medium-high and boil without stirring for 10-15 minutes until golden.
  • Drizzle the mixture over the apples (it will thicken quickly but will become liquid again as it rests). Let it sit for 2 hours, giving it a gentle stir every so often to enhance the flavors.
  • 1. Preheat the oven to 180°C. 2. Prepare a large baking tray with non-stick baking paper. 3. Place filo sheets on a clean work surface and cover with a dry tea towel followed by a damp tea towel. 4. Spray one filo sheet with oil, then layer another sheet on top and spray with oil. 5. Repeat this process with the remaining filo sheets and oil spray to create a stack.
  • Separate the apples from the toffee mixture. Sprinkle breadcrumbs over the filo stack. Spread the apple mixture along one long edge. Fold in the sides and roll up to enclose the filling. Put it on the tray seam-side down. Spray with oil and sprinkle sesame seeds. Bake until golden brown, about 30 minutes.
  • Transfer the reserved toffee mixture to a saucepan and simmer over medium heat for 10 minutes until the sauce thickens.
  • Slice the roll generously and distribute among plates. Drizzle the sauce on top. Enjoy with the sesame ice cream.
