Irresistible toffee apple dessert, perfect for sharing with loved ones. Experiment with pears, bananas, or strawberries for a delightful twist.
Ingredients:
  • 1 vanilla pod (optional)
  • 125 g unsalted butter
  • 100 g icing sugar
  • 250 g plain flour
  • ½ a lemon
  • 2 large free-range egg yolks
  • 2 tablespoons cold milk
  • 2 x 397 g tins of condensed milk or 2 jars of Merchant Gourmet Dulce de Leche toffee
  • 4 medium cooking apples
  • 2 heaped tablespoons icing sugar
Instructions:
  • Place the unopened tins of condensed milk in a high-sided pan, covered with water. Bring to a boil, then simmer with a lid on for 3 hours, making sure to check occasionally to prevent boiling dry. Allow the tins to cool. For the pastry, score the vanilla pod lengthways and scrape out the seeds. Cream butter, icing sugar, and a pinch of sea salt, then mix in flour, vanilla seeds, lemon zest, and egg yolks until it resembles breadcrumbs. Add cold milk and form into a dough. Chill for at least 1 hour. Roll out pastry, line a tart tin, and freeze for 1 hour. Preheat the oven to 180°C/350°F/gas 4, bake the pastry case for 15 minutes until golden. Quarter and slice apples, toss in icing sugar. Spread caramel over the pastry, top with apples, and bake for 40 minutes. Serve with yoghurt or vanilla ice cream. Enjoy!
