Toffee apple cheesecake recipe

Upgrade your favorite old-school treat with a stunning cheesecake twist that will steal the show at any party.
Ingredients:
  • 250g pkt Arnott’s Granita biscuits
  • 125g butter, melted
  • 750g cream cheese, at room temperature, chopped
  • 100g (1/2 cup) caster sugar
  • 8.80 gm vanilla extract
  • 1.25 gm ground cinnamon
  • 400g can pie fruit apples, sliced, coarsely chopped
  • 4 fresh apple slices
  • 170g (3/4 cup) caster sugar
  • 1/2 tsp red food colouring
Instructions:
  • Preheat your oven to 160C (140C fan forced). Line a 22cm round springform pan with baking paper.
  • Pulse the biscuits in a food processor until they form fine crumbs. Add the butter and process until well combined. Press the biscuit mixture firmly into the base and two-thirds up the side of the pan using a straight-sided glass. Chill in the fridge.
  • In a bowl, use electric beaters to whip together cream cheese, sugar, and vanilla until creamy. Gradually add eggs one at a time, beating thoroughly after each addition.
  • Mix cinnamon and pie fruit apples in a bowl. Spread the apple mixture over the biscuit base, pressing down gently. Pour cream cheese mixture on top. Bake for 40-50 minutes until the cheesecake is set. Cool in the slightly ajar oven for 2 hours, then refrigerate overnight. Take out of the fridge 30 minutes before adding topping.
  • To create the toffee apple topping, melt sugar with 60ml (1/4 cup) water in a saucepan over low heat until sugar dissolves, stirring occasionally for 5 minutes. Increase heat to high and allow the mixture to boil without stirring for 8-10 minutes until it turns golden. Add color and let it sit for 2 minutes to settle after removing from heat. Brush any sugar crystals off the pan with a wet pastry brush as needed.
  • Arrange the apple slices on a lined tray, then drizzle with a touch of the toffee. Pour the rest of the topping over the cheesecake, spreading swiftly for a smooth finish. Let it sit for 15 minutes to firm up.
  • Top the cheesecake with the arranged apple slices right before serving.
