Toffee apple clafouti

Ingredients:
  • 500ml (2 cups) milk
  • Melted butter, to grease
  • 6 (about 1.2kg) golden delicious apples, peeled, cored, quartered
  • 220g (1 cup) caster sugar
  • 80ml (1/3 cup) water
  • 100g (2/3 cup) plain flour
  • 160g (2/3 cup) sugar
  • 3 eggs
  • 40.00 ml Cointreau liqueur
  • 36.80 gm vegetable oil
  • 40.00 ml vanillin sugar
Instructions:
  • Preheat your oven to 200°C. Use melted butter to lightly grease a 10-cup (2.5-litre) ovenproof dish. Place apple pieces evenly over the base of the dish.
  • In a heavy-based saucepan over medium heat, combine caster sugar and water until sugar dissolves, stirring for 2 minutes. Increase heat to high, bringing the mixture to a boil. Then reduce heat to low and simmer, uncovered, for 10 minutes until golden, gently brushing down the sides of the pan with a damp pastry brush. Remove from heat and let bubbles settle. Pour the toffee evenly over the apples in the dish.
  • In a bowl, mix together flour and sugar. Then whisk in eggs one at a time. Add the liqueur, oil, and vanillin sugar. Slowly pour in the milk while stirring until smooth. Pour the batter over the apples and bake in a preheated oven for 45 minutes until a skewer comes out clean. Let it rest for 10 minutes before serving.
