Toffee apple wedges

Timeless toffee apple bites - always a hit!
Ingredients:
  • 3 medium red apples
  • 430.00 gm caster sugar
  • 82.50 gm liquid glucose
  • 1/2 tsp white vinegar
  • 1/4 tsp red food colouring
Instructions:
  • Prepare the apples by washing, drying, and coring them. Slice each apple into 8 wedges and pat them dry with a paper towel. Carefully insert a paddle pop stick into each apple wedge. Line a large baking tray with parchment paper.
  • Combine sugar, glucose, vinegar, and 1/2 cup warm water in a heavy-based saucepan over low heat. Stir constantly for 5 minutes until sugar is dissolved (do not bring to a boil).
  • Turn up the heat to medium and allow the mixture to come to a boil. Boil without stirring for 10 to 15 minutes until the toffee reaches the hard crack stage at 150 C on a candy thermometer, occasionally brushing the side of the pan with a pastry brush dipped in water to prevent crystallization.
  • Take the mixture off the heat. Swiftly add food coloring to turn it red, stirring well. Let it sit for 30 seconds for the bubbles to settle a bit. Quickly coat one apple piece with the toffee, shake off any extra, and place it on the tray, skin-side down. Repeat this with the rest of the apples and toffee. Allow them to set for 20 minutes. Serve right away.
