Coconut and raisin pecan pie, served with vanilla ice cream or whipped cream.
Ingredients:
  • 1 (9 inch) unbaked pie shell
  • 2 eggs, beaten
  • 0.33329999446869 cup butter, melted
  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon distilled white vinegar
  • 0.5 cup chopped pecans
  • 0.5 cup shredded coconut
  • 0.5 cup raisins
Instructions:
  • Preheat your oven to 350°F (175°C) to get it ready for cooking.
  • In a medium mixing bowl, whisk together eggs, butter or margarine, sugar, vanilla extract, and vinegar until smooth. Fold in pecans, coconut, and raisins, then pour the mixture into the pastry shell.
  • Place in a hot oven for 40 minutes. Let cool before enjoying.
