Ginger Peach Jam

Fresh peach jam with crystallized ginger for a sweet and spicy twist.
Ingredients:
  • 4.5 cups fresh peaches - peeled, pitted and chopped
  • 0.25 cup finely chopped crystallized ginger
  • 1 (1.75 ounce) package powdered fruit pectin
  • 6 cups white sugar
  • 0.5 teaspoon butter
Instructions:
  • Check four pint-sized jars for cracks and rust, discarding any defective ones. Submerge them in simmering water for at least 5 minutes or until the jam is done. Clean new, unused lids and rings with warm soapy water.
  • Simultaneously, let peaches, ginger, and pectin come to a lively boil in a large saucepan over medium heat. Incorporate sugar and butter; stir until sugar dissolves. Keep stirring continuously as it returns to a boil for approximately 1 minute. Take off the heat and skim off any foam using a spoon.
  • Fill hot, sterilized jars with peach mixture, leaving 1/4 inch of space at the top. Use a clean knife or thin spatula to eliminate any air bubbles. Wipe the jar rims with a damp paper towel to clean off any residue. Seal with lids and screw on tightly.
  • 1. Start by placing a rack in the bottom of a large stockpot and filling it halfway with water. 2. Once the water reaches a boil over high heat, gently lower the jars into the pot about 2 inches apart using a holder. 3. Pour in additional boiling water to ensure the jars are covered by at least 1 inch. 4. Bring everything to a rolling boil, cover the pot, and process for 10 minutes.
  • Transfer the jars from the stockpot to a cloth-covered or wooden surface and allow them to cool several inches apart.
  • After cooling, gently press down on each lid with your finger to confirm a tight seal and ensure it remains stable. Store in a cool, dark location.
