Triple-ginger cookies with unbeatable chewiness and crispiness, reminiscent of grandma's baking. Packed with crystallized, fresh, and ground ginger, this recipe makes 54 delectable cookies perfect for sharing (or hoarding!).
Ingredients:
  • 1 cup sugar
  • 3/4 cup butter or margarine, softened
  • 1/4 cup chopped crystallized ginger
  • 1/4 cup molasses
  • 1 egg
  • 2 1/3 cups Gold Medal™ all-purpose flour
  • 1 tablespoon grated gingerroot
  • 2 teaspoons baking soda
  • 1 teaspoon ground ginger
  • Sugar
Instructions:
  • Preheat the oven to 375°F. In a large bowl, combine 1 cup sugar, butter, crystallized ginger, molasses, and egg. Mix in all remaining ingredients except for the sugar.
  • Form dough into 1-inch balls, coat with sugar, then space them 2 inches apart on a non-stick cookie sheet and gently press to flatten.
  • Bake for 5 to 7 minutes until edges are set. Transfer to wire rack and cool completely for about 30 minutes.
