Ginger and mint mules

Indulge in delicious holiday cocktails blending sweet and spicy flavors.
Ingredients:
  • 500ml (2 cups) ginger beer, chilled
  • 250ml (1 cup) vodka
  • 250.00 ml fresh mint leaves
  • 2 limes, cut into pieces
  • Ice cubes, to serve
  • 125ml (1/2 cup) water
  • 110g (1/2 cup) caster sugar
  • 2 large fresh mint sprigs
  • 1 x 5cm-piece fresh ginger, peeled, thinly sliced
Instructions:
  • For the ginger & mint syrup, in a medium saucepan, mix water, sugar, mint, and ginger over low heat until the sugar dissolves. Increase heat to high and boil for 5 minutes without stirring until the syrup slightly thickens. Cool for 30 minutes, then strain and discard the ginger and mint.
  • In a large jug, mix ginger & mint syrup, ginger beer, vodka, mint, lime, and ice cubes. Stir well and serve right away.
