Ginger and mint rum

"Invigorating ginger-mint rum, ideal for outdoor gatherings."
Ingredients:
  • 3 limes, coarsely chopped
  • 20.00 gm caster sugar
  • 2 tsp Angostura bitters
  • 250ml rum
  • 1000.00 ml (1 litre) ginger beer, chilled
  • 62.50 ml fresh mint leaves
  • Ice cubes, to serve
Instructions:
  • In a large bowl, gently crush the limes using the end of a rolling pin, then transfer to a serving jug.
  • Combine caster sugar, Angostura bitters, and white rum, stirring until mixed. Pour over chilled ginger beer, add mint leaves, and serve immediately with ice cubes.
