Ancient Persian-inspired soft drink syrup that lasts indefinitely, perfect for camping and refreshing in the heat.
Ingredients:
  • 4 cups white sugar
  • 2 cups water
  • 12 ounces fresh or frozen strawberries, chopped
  • 1 cup chopped fresh mint
  • 0.5 cup sliced fresh ginger
  • 2 lemons, peeled and juiced
  • 1 cup white balsamic vinegar (not distilled vinegar)
Instructions:
  • In a saucepan, combine sugar and water and bring to a boil. Let it boil until the sugar dissolves. Add strawberries, mint, ginger, lemon peels, and lemon juice. Bring it back to a boil, then simmer over medium heat for 20 minutes. Take it off the heat and mix in the white balsamic vinegar.
  • Let the syrup sit overnight at room temperature, then strain out the fruits using a fine sieve. Transfer to a clean, airtight container to store at room temperature.
  • Simply combine 1 part syrup with 4 to 6 parts water, stir well, and enjoy cold over ice if desired.
