Humble stone-fruit crumble

Elevate your fruit crumble with a unique blend of stem ginger and crunchy porridge oats for the ultimate twist!
Ingredients:
  • 1 kg stone fruit peaches, nectarines, red or yellow plums - trimmed, stones and sliced into large chunks
  • 500 g strawberries hulled
  • 150 g soft brown sugar
  • 1 orange zest and juice of
  • 4 sprigs of lemon verbena (optional)
  • 100 g plain flour
  • 100 g unsalted butter cold
  • 3 pieces stem ginger chopped
  • 100 g rolled oats
Instructions:
  • Preheat wood oven to medium (180°C/350ºF/gas 4) or regular oven. Trim and slice fruit into chunks. Place in roasting tray along with hulled strawberries, 50g sugar, orange zest and juice, and lemon verbena (if using). Roast in front of oven for 20 minutes until syrupy. For crumble topping, rub flour into butter until crumbly. Mix in ginger and oats, then sprinkle over fruit. Bake for 40-45 minutes until bubbly and golden.
