Guacamole burger in a sweet potato noodle bun

Transform humble sweet potato into golden burger buns with creative twist using sweet potato noodles.
Ingredients:
  • 1.4kg gold sweet potato, peeled
  • 60ml olive oil
  • 2 Free Range Eggs, lightly whisked
  • 400g 4 Star Beef Mince
  • 30g pkt salt-reduced taco seasoning
  • 62.50 ml coriander, finely chopped
  • 1 small avocado, stoned, peeled, coarsely chopped
  • 1 small tomato, seeded, finely chopped
  • 60g chopped kale
  • 1/2 small red onion, thinly sliced
  • 40.00 ml drained sliced jalapeños
  • 41.60 gm chilli sauce
Instructions:
  • Transform the sweet potato into noodles using a spiralizer, mandolin, or knife.
  • In a large frying pan, heat 3 teaspoons of oil. Cook half of the sweet potato, stirring occasionally, for 5-7 minutes until softened. Transfer to a medium bowl. Repeat with the remaining 3 teaspoons of oil and the rest of the sweet potato. Set aside to cool for 15 minutes.
  • Mix the egg into the sweet potato and season to taste. Combine well. Distribute the mixture evenly among 8 greased 10cm ramekins or bowls. Cover with greased plastic wrap and press down using another ramekin or can to shape into buns. Refrigerate for 30 minutes.
  • Next, mix together the minced meat, taco seasoning, and two-thirds of the coriander in a bowl. Form the mixture into four 10cm patties.
  • In a small bowl, smoothly mash the avocado. Mix in the tomato, lime juice, and the rest of the coriander. Season to taste.
  • In a large frying pan, heat the remaining oil over high heat. Carefully remove the sweet potato buns from the ramekins. Cook them in batches for 2-3 minutes on each side until they are golden and cooked through. Place them on a plate and cover to keep warm.
  • Place the patties in the pan and cook on each side for 2-3 minutes, or until fully cooked.
  • On plates, layer half of the sweet potato buns with kale, onion, patties, avocado mixture, jalapeños, and chili sauce. Top with the remaining buns to create sandwiches.
