Transform humble beans with vibrant Mexican flair.
Ingredients:
  • 1 onion
  • 1 red pepper
  • 60g Cheddar cheese
  • olive oil
  • 1 clove of garlic
  • 1 teaspoon chilli powder
  • 1 teaspoon tomato puree
  • 1 400g tin plum tomatoes
  • 1 400g tin red kidney beans
  • 4 large flour tortillas
  • 2 large handfuls mixed salad leaves
  • balsamic vinegar
Instructions:
  • Preheat the oven to 180°C/350°F/ gas 4. Chop the onion and pepper. Grate the cheese. Sauté the onion in oil until softened. Add garlic, chili powder, tomato purée, tomatoes, and kidney beans. Cook for 10 minutes and season. Sauté the pepper until slightly tender. Blend half of the filling to form a paste. Spread tortillas with the bean paste, add filling, pepper, and cheese. Roll up and place on baking sheets. Bake until golden. Toss salad with oil and vinegar and serve with bean wraps.
