Cool down with a refreshing passionfruit sorbet.
Ingredients:
  • 2kg passionfruit
  • 25ml Cointreau or Grand Marnier
  • 100ml tequila
  • 1100g caster sugar
  • 125ml water
Instructions:
  • Cut the passionfruit in half, scoop out 3 cups of pulp into a bowl. Process the pulp in a food processor until seeds separate from juice. Strain the mixture through a fine sieve into a large bowl, press down on seeds to extract juice. Reserve 1/4 cup seeds, discard the rest, and combine with passionfruit juice.
  • In a small saucepan, combine sugar and water. Stir over high heat until sugar dissolves and mixture boils. Boil for 10 more seconds, then remove from heat. Let cool.
  • Mix the passionfruit mixture and sugar syrup, then freeze for 6 hours or until frozen. Chill an electric mixer bowl in the fridge or freezer. Remove the sorbet from the freezer and break it into smaller pieces using a wooden spoon. Transfer the sorbet pieces to the chilled mixing bowl. Use the paddle attachment of your electric mixer to beat for 2 minutes until smooth. Flatten the surface, then freeze for at least 2 hours until firm. Alternatively, use an ice-cream maker following the manufacturer's instructions to freeze the mixture.
