Summer sorbet cocktails

Whip up quick and refreshing sorbet cocktails: Passionfruit Prosecco Ice, Cheat's Frosé, and Chilli Lime Fizz Margarita.
Ingredients:
  • 1 scoop passionfruit sorbet
  • 1 tsp fresh passionfruit pulp
  • Prosecco, to serve
  • Fresh mint sprig, to serve
  • 1 scoop berry sorbet (such as raspberry or strawberry)
  • Rose Persian fairy floss, to serve
  • Sparkling rosé wine, to serve
  • Edible pink rose petals, to serve
  • 30.00 gm salt
  • 1/2 lime, rind finely grated, thinly sliced
  • 1 scoop lime sorbet
  • Fresh green jalapeño chilli, deseeded, thinly sliced, to serve
  • 30ml tequila
  • Lemonade, to serve
Instructions:
  • Spoon passionfruit sorbet and pulp into a champagne coupe, then pour over prosecco. Garnish with a fresh mint sprig for a touch of elegance.
  • Arrange a scoop of berry sorbet in a champagne coupe, layer with fairy floss, pour over sparkling rosé to fill the glass, and garnish with delicate rose petals on top.
  • To create the fizz, mix the salt and lime rind on a plate. Garnish the rim of a champagne coupe or margarita glass with a lime slice, then dip it into the lime-salt mixture to coat. Fill the glass with lime sorbet and sprinkle with chili. Pour in the tequila, top off with lemonade, and garnish with a lime slice.
