Ingredients:
  • 250g butter, softened
  • 150.00 gm icing sugar
  • 4.40 gm vanilla extract
  • 500.00 ml Plain Flour
  • 65.00 gm cornflour
  • 40.00 ml fresh passionfruit pulp (see note)
Instructions:
  • Prepare 4 baking trays by lining them with parchment paper.
  • With an electric mixer, blend butter, sugar, and vanilla until light. Mix in flour and cornflour until combined. Transfer to a floured surface and gently knead until smooth.
  • Separate dough into two equal portions. Place each portion between two sheets of baking paper and roll out to a 5mm thickness. Chill in the refrigerator for 20 minutes or until firm.
  • Preheat your oven to 160C. Use a 7.5cm star-shaped cutter to make the biscuits. Arrange them on trays. Combine any leftover dough, and continue cutting until it's all used. Chill for 30 minutes until firm.
  • Bake shortbread on two trays simultaneously for 15 to 20 minutes, or until light golden and firm when gently touched. Let cool on trays before enjoying.
  • To make passionfruit icing: In a small bowl, mix together icing sugar and passionfruit pulp until smooth and spreadable. Spread the icing over the biscuits and let it set before serving.
