Passionfruit shortbread eggs recipe

Easter shortbread with tangy passionfruit curd - a delightful treat with tea.
Ingredients:
  • 75.00 gm pure icing sugar, plus extra for dusting
  • 250.00 ml plain flour
  • 32.50 gm cornflour
  • 1 egg
  • 6.25 gm cornflour
  • 75g butter, chopped
  • 2 passionfruit, halved (see notes)
Instructions:
  • In an electric mixer, whip the butter and icing sugar for 5 minutes until they're light and fluffy. Then, sift in the plain flour and cornflour, mix until combined. Place the dough on a lightly floured surface, knead until smooth, wrap in plastic, and chill for 20 minutes.
  • Preheat your oven to 170C/150C fan-forced, then grease and line 2 large baking trays with baking paper.
  • Roll out dough to 3mm thickness between sheets of baking paper. Cut 24 ovals using a 5.5cm x 7.5cm oval cutter, rerolling and cutting trimmings. Arrange ovals 2cm apart on baking trays. Chill for 10 minutes. Cut rounds from 12 ovals using a 3cm round cutter following the picture as a guide; discard excess. Bake for 12 to 15 minutes until firm to touch but not browned. Let cool on trays for 5 minutes then transfer to wire rack to cool completely.
  • To make Passionfruit Curd, in a small, heavy-based saucepan, combine egg, egg yolk, sugar, and cornflour. Whisk together. Add butter and passionfruit pulp. Cook on medium heat while stirring with a wooden spoon for 7 to 8 minutes until the mixture thickens and coats the back of the spoon. Remove from heat, strain through a sieve into a heatproof bowl, discarding seeds. Let it stand for 5 minutes, cover the surface with plastic wrap, and allow it to cool completely.
  • Spread 1 teaspoon of creamy curd onto the uncut biscuits, creating a smooth layer. Place the remaining biscuits on top to create sandwiches. Spoon 1 teaspoon of the remaining curd into each small round on the biscuit to mimic a 'yolk' appearance. Dust the biscuits with a sprinkle of extra icing sugar for a finishing touch. Serve and enjoy the delightful treats.
