Buttery passionfruit shortbread bites

Zesty passionfruit shines in these delicate shortbread cookies.
Ingredients:
  • 150g butter, softened
  • 70.95 gm caster sugar
  • 32.50 gm rice flour
  • 250.00 ml plain flour
  • 2 passionfruit
  • Icing sugar mixture, for dusting
Instructions:
  • Preheat your oven to 150C (130C fan-forced) and prepare 2 baking trays by greasing and lining them with baking paper.
  • 1. In an electric mixer, combine butter and 1/4 cup sugar until creamy. 2. Gently stir in flours with a wooden spoon. 3. Strain passionfruit to remove seeds, add pulp to the butter mixture, and mix well.
  • Shape 1 level tablespoon of mixture into a ball, then flatten it between your palms. Place on a prepared tray, spacing them 2cm apart. Repeat with the rest of the mixture. Lightly brush the tops with a little water and sprinkle with the remaining sugar.
  • Bake one tray at a time for about 15 minutes until just firm. Let them cool on the trays, then serve with a dusting of icing sugar.
