Passionfruit melting moment slice recipe

Create irresistible passionfruit slice with only 6 simple ingredients: passionfruit zing, buttery shortbread, and custard powder for the ultimate treat.
Ingredients:
  • 4.40 gm vanilla extract
  • 310g butter, chopped, at room temperature
  • 210g (11 ⁄3 cups) icing sugar mixture, plus 3 tbsp, extra
  • 225g (11 ⁄2 cups) plain flour
  • 70g (1 ⁄2 cup) custard powder, plus extra, to dust
  • 3 passionfruit, plus extra, strained, to make icing
Instructions:
  • Preheat your oven to 170C/150C fan forced. Grease a 19cm square cake pan and line it with baking paper, allowing for a 2-sided overhang. Also, line a baking tray with baking paper.
  • Beat vanilla, 250g butter, and 60g (1 ⁄3 cup) sugar with electric beaters in a bowl until pale and creamy. Sift in flour and custard powder. Mix with a flat-bladed knife until a soft and evenly incorporated dough forms.
  • Spread half of the dough evenly over the bottom of the prepared pan. Shape the remaining dough into 16 balls and place them on the prepared tray, making sure they are 3cm apart. Lightly coat a fork with extra custard powder and use it to flatten each ball into a 3.5cm disc. Bake the trays, rotating halfway through, for 18 minutes or until the bottoms are light golden. Let the biscuit base cool completely in the pan. After 5 minutes, transfer the biscuits to a wire rack to cool completely.
  • Use electric beaters to cream the remaining butter until pale and creamy. Gradually add the remaining sugar, beating well after each addition until combined. Spoon out the passionfruit pulp and mix into the butter mixture until well combined.
  • Mix together 2 1/2 tablespoons of sugar and a splash of extra passionfruit juice until the icing is smooth and ready for drizzling.
  • Gently lift the biscuit base out of the pan using a piece of paper. Spread it over the filling, then arrange the biscuits on top. Dust with the remaining icing sugar and drizzle over the icing. Cut into squares between the biscuits before serving.
