Award-winning, melt-in-your-mouth biscuits.
Ingredients:
  • 250g unsalted butter, softened
  • 4.40 gm vanilla essence
  • 75.00 gm pure icing sugar, sifted
  • 500.00 ml plain flour
  • 42.90 gm cornflour
  • 60g butter, softened
  • 1 large passionfruit
  • 150.00 gm pure icing sugar, sifted
Instructions:
  • Preheat your oven to 160°C and prepare 2 baking trays with non-stick baking paper.
  • Cream together butter, vanilla, and icing sugar using an electric mixer until fluffy. Then, sift flours over the mixture and beat on low speed until a soft dough forms.
  • Shape heaped teaspoonfuls of mixture into small balls, then arrange them on trays. Gently press each biscuit using a fork dipped in flour to flatten them to 1cm thickness. Bake for 15 minutes or until firm. Let them cool on trays for 10 minutes before transferring them to a wire rack to cool completely.
  • Create passionfruit filling: Whip butter with an electric mixer until fluffy. Blend in passionfruit pulp and icing sugar.
  • Spread the flat side of a biscuit with a teaspoon of filling, then sandwich with another biscuit. Repeat with the rest of the biscuits and filling. Dust with icing sugar and serve.
