Indulge in nostalgic buttery biscuits - perfect for tea time or to impress guests at your dinner party.
Ingredients:
  • 200g (1 1/3 cups) plain flour
  • 100g (2/3 cup) cornflour
  • 225g unsalted butter, chopped, softened
  • 80g (1/2 cup) icing sugar, sifted, plus extra, to dust
  • 3 lemons, zested
  • 4.40 gm vanilla extract
  • 4 passionfruit, pulp removed
  • 200g (1 1/4 cups) icing sugar, sifted
  • 25.00 gm liquid glucose
  • 80g unsalted butter, softened
Instructions:
  • Preheat your oven to 170C. Sift the flours together with 1/4 teaspoon of salt into a bowl. Use an electric mixer to beat the butter and sugar until light and fluffy. Mix in the zest and vanilla, then gradually blend in the combined flours until the mixture just comes together.
  • Shape 2 teaspoonsful of dough into balls and arrange them on 2 baking trays lined with parchment paper. Flatten the balls to 3.5cm rounds using a floured glass, then mark the biscuits with a floured fork. Bake for 12 minutes, rotating the trays halfway through, until the biscuits are lightly golden. Cool on a wire rack. Yields 40 biscuits.
  • Prepare the filling by straining the pulp through a fine sieve to remove the seeds. Keep 2 tablespoons of juice and 3 teaspoons of seeds. Combine them with the remaining ingredients in an electric mixer bowl. Beat on high speed until light and fluffy. Chill in the refrigerator for 30 minutes.
  • Spread the flavorful filling generously on 20 biscuits, then top them with the remaining biscuits to create delicious sandwiches. Finish with a light dusting of icing sugar for an elegant presentation when serving.
