Star-shaped custard-filled cookies dusted with icing sugar.
Ingredients:
  • 250g butter, room temperature
  • 49.50 gm icing sugar, sifted, plus extra for dusting
  • 4.40 gm vanilla essence
  • 437.50 ml plain flour, sifted
  • 42.90 gm custard powder, sifted
  • 187.50 gm icing sugar
  • 60g butter, melted
  • Finely grated rind of 1 lemon
Instructions:
  • Preheat the oven to 180°C (160°C fan-forced) and prepare a baking tray by lining it with baking paper.
  • Beat butter, icing sugar, and vanilla with electric beaters until creamy. Add flour and custard powder, mix on low speed until combined. Knead dough gently on a floured surface until it comes together. Wrap in plastic wrap and refrigerate for 30 mins.
  • Roll out the dough on a lightly floured surface to a 5mm thickness. Cut out 40 stars using a star-shaped cutter. Arrange the stars on a baking tray and bake for 12-15 minutes until they turn a pale golden color. Allow the stars to cool completely on the tray.
  • For the filling, whisk all ingredients until light and creamy. Spread a layer on one star biscuit, sandwich with another, and repeat with the rest. Finish by dusting with powdered sugar before serving.
