Create adorable, picture-perfect melting moments perfect for a charming afternoon tea.
Ingredients:
  • 250g butter, softened
  • 75.00 gm pure icing sugar, sifted
  • 4.40 gm vanilla extract
  • 375.00 ml plain flour
  • 85.80 gm cornflour
  • 60g butter, softened
  • 150.00 gm pure icing sugar, sifted
  • 1 tsp strawberry essence
  • Pink food colouring
  • 1 tsp finely grated lemon rind
  • 1/2 tsp finely grated lime rind
  • Yellow food colouring
Instructions:
  • Begin by preheating your oven to 160C/140C fan-forced. Line 2 baking trays with baking paper. Next, in a bowl, use an electric mixer to beat butter, sugar, and vanilla until light and fluffy, which should take about 5 minutes. Sift flour and cornflour over the butter mixture. Then, using a wooden spoon, gently stir until just combined to form a soft dough.
  • Shape 1 level tablespoon of dough into a ball and repeat this step to make 32 balls. Place them on prepared trays, with 2cm space between each ball. Gently flatten each ball to form a 4cm round using a fork dipped in flour. Bake for 12 to 15 minutes, rotating trays halfway through, until they turn light golden. Let them cool on the tray for 10 minutes, then transfer to a wire rack to cool completely.
  • In the meantime, prepare the Filling: With an electric mixer, whip the butter for 3 to 5 minutes until it is light and fluffy. Incorporate the sugar and beat until fully blended. Divide the mixture into two separate bowls. To one bowl, mix in the strawberry essence until well blended and tint it pink. To the other bowl, add lemon and lime rind, beat until combined, tint it yellow.
  • Spread 8 biscuits with 1 teaspoon of strawberry filling, sandwich with remaining 8 biscuits, and repeat with lemon-lime filling. Serve.
