Strawberry and lemon curd trifle

Delicious lemon curd and strawberry trifle - perfect for holidays or family gatherings!
Ingredients:
  • 40.00 gm boiling water
  • 60g caster sugar
  • Zest of one lemon, finely grated
  • 21.00 gm lemon juice
  • 1 punnet strawberries, hulled and sliced thinly plus extra
  • 300ml whipping cream
  • 200g amaretti biscuits, coarsely crushed
  • 375.00 ml lemon curd (store bought or homemade)
  • 1 punnet strawberries, extra, for decoration
  • Zest of one lemon, finely shredded
Instructions:
  • Combine water and sugar in a small heatproof jug, stirring until the sugar dissolves. Mix in lemon rind and juice, then allow it to cool. Transfer sliced strawberries to a medium bowl and drizzle the syrup on top. Cover and set aside.
  • In a medium bowl, whip the cream with an electric mixer on high speed for 3 minutes until firm peaks form. Gently fold in the lemon curd.
  • Place a generous layer of biscuits in 4 serving glasses. Drizzle with strawberry syrup, then add a dollop of lemon curd and cream mixture. Repeat the layers with the remaining biscuits, strawberries in syrup, and lemon curd and cream.
  • Garnish generously with additional strawberries and lemon slices.
