Lemon curd meringues

Tangy lemon meringues with creamy topping and fresh strawberries.
Ingredients:
  • 107.50 gm caster sugar
  • 126.25 gm cream, whipped
  • 2 egg whites
  • 62.50 ml lemon curd
  • 6 strawberries, sliced
Instructions:
  • Preheat your oven to 120C (or 100C fan-forced) and line a large baking tray with non-stick baking paper (you can oil the tray first for easy spreading). In a large bowl, beat egg whites until soft peaks form. Gradually add sugar, beating well after each addition, until the mixture is thick and glossy.
  • Divide the meringue mixture into 6 portions on the tray, ensuring space between each mound for expansion. Use the back of a spoon to form 8cm rounds with an indented center.
  • Bake the meringues for 90 minutes. Allow them to cool completely in the slightly open oven.
  • When ready to serve, delicately mix whipped cream with lemon curd. Fill the cooled meringues with the mixture and garnish with sliced strawberries on top.
