Lovely lemon curdy pud

Indulgent lemon pudding: layers of tangy lemon curd and fluffy meringue. Easy, delightful, and visually appealing!
Ingredients:
  • 55 g butter plus extra for greasing
  • 115 g sugar
  • 1 lemon
  • 2 large free-range eggs
  • 55 g self-raising flour
  • 285 ml milk
Instructions:
  • 1. Preheat your oven to 200ºC/400ºF/gas 6. 2. In a mixing bowl, combine butter, sugar, and lemon zest. Cream together until pale and fluffy. 3. Separate eggs and add yolks and flour to the bowl. Mix well. 4. Pour in milk and 3 tablespoons of lemon juice. Mix thoroughly. 5. In a separate bowl, whisk egg whites until stiff peaks form. 6. Gently fold the egg whites into the mixture. 7. Pour the batter into a buttered ovenproof dish. 8. Create a water bath in a roasting tin and place the dish in it. 9. Bake for about 45 minutes until the top is set and golden.
