Ingredients:
  • 8 frozen sweet shortcrust pastry cases
  • 82.50 ml lemon curd
  • Icing sugar mixture, to serve
  • 250g strawberries, hulled, cut into quarters lengthways
Instructions:
  • Preheat your oven to 180°C. Line a baking tray with foil and arrange the tart cases on top. Bake for 10 minutes until they turn golden. Let them cool on a wire rack for 10 minutes, then carefully remove from the foil.
  • Fill each tart case with a generous 2 teaspoons of tangy lemon curd. Top with fresh strawberries and finish with a dusting of sweet icing sugar. Ready to enjoy!
