Air Fryer Shortbread Cookie Fries

"Slice cookie dough into shortbread 'fries,' air fry for a unique sweet snack, & enjoy with strawberry-chipotle 'ketchup' and lemon curd 'mustard.'"
Ingredients:
  • 1.25 cups all-purpose flour
  • 3 tablespoons white sugar
  • 0.5 cup butter
  • 0.33333334326744 cup strawberry jam
  • 0.125 teaspoon ground dried chipotle pepper
  • 0.33333334326744 cup lemon curd
Instructions:
  • In a medium bowl, mix together the flour and sugar. Use a pastry blender to cut in the butter until the mixture looks like fine crumbs and begins to stick together. Shape the mixture into a ball and knead until smooth.
  • Preheat your air fryer to 350°F (190°C).
  • Flatten dough to 1/4-inch thickness on a floured surface, then slice into 1/2-inch-wide "fries" that are 3 to 4 inches long. Finish by sprinkling with a bit more sugar.
  • Place fries in a single layer in the air fryer basket and cook until lightly browned, about 3 to 4 minutes. Allow to cool in the basket until firm, then transfer to a wire rack to cool completely. Repeat with remaining dough.
  • Strain strawberry jam through a fine mesh sieve, then mix in ground chipotle. Whisk lemon curd until it reaches a dippable consistency for the "mustard."
  • Enjoy the sugar cookie fries with strawberry ketchup and lemon curd mustard on the side.
