Pie maker lemon jelly cakes recipe

Upgrade your childhood favorite using a Kmart pie maker, and get creative with flavors like strawberry jam!
Ingredients:
  • 85g pkt lemon flavoured jelly crystals
  • 250ml (1 cup) boiling water
  • 125g unsalted butter, at room temperature, chopped
  • 2 eggs
  • 150g (1 cup) plain flour
  • 4.00 gm baking powder
  • 80ml (1/3 cup) milk
  • 170g (2 cups) desiccated coconut
  • Bought lemon curd, to serve
  • Whipped cream, to serve
Instructions:
  • Start by gently sprinkling the jelly crystals into a shallow heatproof dish. Pour the boiling water over the crystals and stir until fully dissolved. Mix in 125ml (1/2 cup) room-temperature water. Allow it to sit at room temperature for 1 hour until thickened, but not completely set.
  • Beat butter and sugar until pale and creamy using electric beaters. Add eggs one at a time, beating well after each addition.
  • Combine the flour and baking powder, then gently mix into the butter mixture along with the milk until fully incorporated.
  • Spoon half of the batter into the pie maker holes and bake for 10 minutes or until a skewer comes out clean. Transfer cakes to a wire rack. Repeat with the rest of the batter. Let them cool before enjoying.
  • Place the coconut on a large plate. Dip the cakes into the jelly mixture in batches, soaking for 30 seconds on each side. Then coat the cakes in coconut, pressing gently to ensure a good cover. Transfer the coated cakes to a plate and let them cool completely.
  • Take a large serrated knife to slice the cakes in half horizontally. Add a dollop of curd and cream in the middle of the bottom halves, then cover with the remaining halves. Enjoy!
