Pistachio, strawberry and lime pyramids

Create a stunningly simple dessert using three bold and delicious flavors.
Ingredients:
  • 750ml pistachio ice-cream, softened slightly
  • 750ml strawberry ice-cream, softened slightly
  • 750ml lime sorbet or lemon sorbet, softened slightly
Instructions:
  • Divide the creamy pistachio ice-cream evenly into eight 3/4-cup (185ml) metal moulds, filling each one-third full. Use a small palette knife to create a smooth surface. Chill in the freezer for 30 minutes to set. If using pyramid-shaped moulds, invert and secure them with the pointed end in an ice-cube tray.
  • Evenly distribute the strawberry ice-cream among moulds, leaving space for the final layer, and ensure the surface is smooth. Place in the freezer for 30 minutes to set.
  • Smooth the lime sorbet over the top edge to create a flush surface. Freeze for 2 hours or until firm.
  • Quickly loosen the ice-cream from the moulds by rubbing them with a hot, damp cloth, then invert each pyramid onto a plate. Serve immediately.
